Vegan Rocky Road

This Vegan Rocky Road is a a delicious cabinet sweet treat which illustrates how our Smoothie Bases are not just for beverages!

Ingredients:

  • 250ml coconut oil

  • 60g coconut sugar

  • 250g Barker’s Professional Mixed Berry Smoothie Base

  • 60g cocoa powder

  • 140g sliced almonds

  • 60g walnuts

  • 50g pistachios

  • 40g puffed rice

  • 40g cacao nibs

  • 60g cranberries

  • 90g coconut flakes

  • 5g vanilla extract

Method:

  1. Melt the coconut oil and the coconut sugar together.

  2. Allow to cool slightly then mix all the ingredients together and spread into a quiche tin.

  3. Sprinkle with sliced almonds and slice to the same size as the breakfast bar.
