Thai Kumara Bake
Serves 4
Ingredients:
4 kumara, peeled and sliced lengthways
2 cloves garlic, choppped
1 onion, thinly sliced
4 Tbsp rosemary leaves, chopped
300ml water
300g Barker’s Professional Thai Style Meal Base
9 smoked cheese slices
Method:
In a greased roasting pan, lay down and overlap the kumara slices.
In a saucepan, bring the garlic, onion, rosemary, water and Barker’s Professional Thai Style Meal Base to a simmer.
Pour the sauce over the kumara.
Place into a pre-heated 180°C oven and bake for 25 minutes.
Remove from the oven, add the cheese slices and return for a further 7 minutes to gratinate.
HANDY HINTS:
Roast garlic in its skin until soft and use this in place of raw garlic.
Swap out smoked cheese for crumbled feta cheese and parmesan.
