SERVES 10-12, 30 MIN PREP, 20 MIN COOK

Ingredients

CHEESE & CHUTNEY PASTRY TWISTS

  • 2 defrosted sheets of Puff pastry

  • whisked Egg

  • 1/4 cup Barker’s Professional Mediterranean Vegetable Chutney

  • 50g Strong cheddar cheese, grated

  • 50g Gruyere cheese, grated

  • 1tsp Sesame seeds, black

SWEET CHILLI DIP

  • 125g Light cream cheese

  • 80g Sour cream

  • 2 1/2 tbsp Anathoth Farm Chef Series Sweet Chilli Relish

  • 2, finely diced, Spring onion

Other ingredient suggestions for the platter

  • Salted kettle chips

  • Assorted cheeses

  • Barker’s Professional Pear & Fig Relish

  • Barker’s Professional Roasted Capsicum Antipasto

  • Crackers

  • Salami

  • Prosciutto

  • Cream cheese stuffed peppers

  • Olives

  • Mini gherkins

  • Mixed nuts, salted

  • Dried fruits

Method

CHEESE & CHUTNEY PASTRY TWISTS

  1. Preheat oven to 190ºC fan bake / 210ºC conventional. Line a large oven tray with baking paper.

  2. Brush the top of one pastry sheet with egg. Spread with Barker’s Professional Mediterranean Vegetable Chutney, leaving a 5mm border around the edges. Top with both cheeses.

  3. Place the second pastry sheet on top and press the edges to seal. Brush with egg. Cut into long 1cm strips, then cut each strip in half. Twist the ends in opposite directions to create pastry spirals.

  4. Place on prepared tray, leaving a little room between each twist for puffing up. Brush with a little more egg and sprinkle with sesame seeds. Bake for 20 minutes, until golden brown and puffed. Best served warm but also good at room temperature!

SWEET CHILLI DIP

  1. Beat cream cheese with an electric mixer until smooth. Add sour cream/yoghurt and Anathoth Farm Chef Series Sweet Chilli Relish. Beat to combine. Stir in spring onion and season with salt and pepper to taste.

PLATTER

  1. Place pastry twists on a large platter/board (can be placed in a glass jar to hold them up nicely). Spoon sweet chilli dip and Barker’s Professional Pear & Fig Relish into bowls and place on platter. Arrange your other chosen ingredients on the platter with a selection of serving utensils.

HANDY HINT:

Pastry twists can be made ahead of time, then reheated in the oven for 5 minutes before serving.

For variety, use any type of Barker’s Professional Chutney or Relish you desire for the cheese & chutney pasty twists
