Chocolate & Coconut Porridge

Ingredients:

  • 1 & 3/4 Cups Light Coconut Milk

  • 1/2 Cup Anchor Protein+ Milk

  • 1 Cup Oats

  • 1 Pinch Salt

  • 1/2 Cup Finely Chopped Dates

  • 2 Tbsp Cocoa Powder

  • 1 Tsp Peanut Butter

  • Shaved Coconut

  • Sliced Banana

  • Kapiti Mascarpone/ Creme Fraiche

  • Barker’s Professional Salted Caramel Topping

Method

  1. In a small saucepan, bring coconut milk and milk to a boil. Add oats and a pinch of salt, and stir in the dates. Cook for approximately 4 minutes, then stir in cocoa powder. Cook for another 1-2 minutes, or until the oats are fluffy and creamy.

  2. Stir in the nut butter, then divide into two bowls. Top with some Kapiti mascarpone, Barker’s Professional Salted Caramel Topping, shaved coconut, nuts & sliced banana.
