Apricot Ham Glaze
Ingredients:
400 ml Barker’s Professional Spiced Apricot Sauce
85 gm coconut sugar
1 tsp ground ginger
1 Tbsp American mustard
Method:
Preheat oven to 170°C.
Carefully remove the skin from the ham and score the surface in a diamond pattern.
Add 60 ml of water to the base of a roasting pan and place the ham on a wire rack in the centre of the pan.
In a saucepan, combine the Barker’s Professional Spiced Apricot Sauce, coconut sugar, ginger and mustard, stirring over a low heat until just simmering. Spoon a third of the mixture over the ham to coat evenly.
Bake for approximately 60 minutes or until heated through, basting with the remaining glaze every 20 minutes during the process.
