Tempura Fish, Chicken, or Vegetables
Serves 4
Ingredients:
½ cup plain flour, sifted
½ cup corn flour
1 tsp table salt
1 tsp baking powder
½ lemon, juiced
150ml soda water, iced
160g Barker’s Professional Sweet & Sour Meal Sauce
chosen protein or vegetables, cut in strips
Method:
Place the flour, corn flour, salt and baking powder in a mixing bowl.
Make a well, then add in the lemon juice and soda water.
Gradually bring together, mixing until there are only little lumps left in the batter.
Heat a deep fryer with clean vegetable oil to 185°C.
Other than fish (which you will dust lightly with flour first), dip the chosen protein and/or vegetables in the batter, allowing the batter to run off prior to adding it to the fryer to crispen.
Line a bowl with absorbent paper, add the deep fried protein and/or vegetables, season whilst hot and serve with a side of Barker’s Professional Sweet & Sour Meal Sauce.
