Spiced Chicken Kebabs with Mango Mint Raita & Mango Pineapple Salsa
Serves 10
Ingredients:
1kg chicken breast and thigh, cut into chunks
4 tbsp Barker’s Professional Tandoori Paste
4 tbsp yoghurt
MANGO MINT RAITA & MANGO PINEAPPLE SALSA
½ cup Barker’s Professional Mango & Peach Chutney
1 tsp finely diced chilli
sliced spring onion ends
shredded mint leaves
1 tsp lime zest
1 tbsp lime juice
Method:
Marinade the chicken in Barker’s Professional Tandoori Paste and the yoghurt for 1 hour.
Thread onto skewers (that have been soaked in cold water for 20 minutes).
Grill or pan fry and serve with Mango Mint Raita and Mango Pineapple Salsa.
MANGO MINT RAITA & MANGO PINEAPPLE SALSA
Mix all of the ingredients together.
Mix half of the mixture with half a cup of unsweetened yoghurt to make the Mango Mint Raita.
Mix the remaining mixture with half a cup of diced, fresh pineapple to make the Mango Pineapple Salsa.
