Saagwala Roti Pizza

Serves 4

Ingredients:

  • 1 can chickpeas, drained

  • 1 tbsp ground cumin

  • 250ml vegetable oil

  • 1 tsp sea salt flakes

  • 4 large roti breads

  • 200g Barker’s Professional Spinach Saagwala Meal Sauce

  • 150g paneer cheese, diced

  • handful spinach leaves, blanched

  • 160g cooked, diced kumara

  • 50g cashew pieces, roasted

  • 400g mozzarella cheese, grated

Method:

  1. Place the chickpeas and cumin in a mixing bowl. Toss together to coat well.

  2. In a saucepan, heat the vegetable oil to 175°C.

  3. Fry the chickpeas until golden, drain on a paper towel and season with sea salt.

  4. Spread 50 grams of Barker’s Professional Spinach Saagwala Meal Sauce on each roti.

  5. Scatter around the paneer, spinach, kumara, cashews and fried chickpeas.

  6. Scatter over the mozzarella cheese

  7. Place into a pizza oven or preheated 230°C and grill through for approximately 15 minutes.
