No Bake Berry Slice

Ingredients:

BASE

  • 1 cup Pitted medijool dates

  • 1 cup Raw almonds

  • 1/3 cup Shredded coconut

  • 3tbsp Coconut oil

  • 1tbsp Cocao powder

MIDDLE

  • 3/4 cup, soaked Raw cashews

  • 1/4 cup Shredded coconut

  • 1/4 cup Coconut cream

  • 1/4 cup Maple syrup

  • 1tsp Vanilla extract

TOP

  • 3/4 cup, soaked Raw cashews

  • 1/2 cup Coconut cream

  • 30ml Barker’s Professional Mixed Berry Smoothie Base

  • 1tbsp Maple syrup

  • 100g, fresh or frozen Blueberries

  • 1/4 cup Shredded coconut

Method:

  1. Make sure you have soaked the cashews for the middle and top layers (see tips below). Line a small slice pan with baking paper.

BASE

  1. Place all ingredients in a food processor and process to a chunky paste (mixture should stick together well when pressed against the sides of the food processor). Tip into the slice pan and press down into an even layer. Place in the freezer while you prepare the middle layer.

MIDDLE

  1. Clean food processor. Add all ingredients for middle layer and blend until smooth (this will take a few minutes). Pour on top of base, spread out evenly and return to freezer for 15 minutes

TOP

  1. Add cashews, coconut cream, Barker’s Professional Mixed Berry Smoothie Base and maple

  2. Freeze for at least 4 hours before slicing and serving. Store any leftovers in an airtight container in the freezer.

HANDY HINTS:

  1. This is a great treat to have on hand in the freezer. Simply remove from the freezer and allow to thaw for a couple of minutes before serving.

  2. The cashews in this recipe need to be soaked in order to achieve a smooth texture. To do this, you can either place in a bowl, cover cashews with cold tap water and leave in the fridge for 8 hours or overnight or place in a bowl, cover cashews with boiling water and leave to sit for 1 hour. Drain well and rinse before using.
