Mixed Berry Custard Tartlets

Ingredients:

SWEET PASTRY

  • Smart Choice Sweet pastry butter crust roll

MIXED BERRY CUSTARD TARTS

  • 100g whipped cream 

  • 2g vanilla bean paste

  • 15g icing sugar 

  • 200g Barker’s Professional Custard Flavoured Patisserie Crème

Method:

  1. Mix the Mixed Berry Custard Tarts ingredients together until thoroughly combined.  Place into a piping with a medium round nozzle and refrigerate

  2. Roll the sweet pastry out to a 3-4mm thickness

  3. Line each 60mm straight edged tin with the sweet pastry, place in the refrigerator for at least half an hour

  4. Pre-heat the oven to 180˚C

  5. Remove tart shells from the refrigerator and blind bake for 15-20 minutes in the oven

  6. Allow to cool and pipe 18 grams of the Barker’s Custard Flavoured Patisserie crème mixture into the base of each tart

  7. Arrange approximately 40 grams of mixed berries on the top

  8. Finish with glaze or dusting sugar
