Mainland Camembert Croquettes

Ingredients

  • 1L Anchor Blue Top Milk

  • 1 pinch ground nutmeg

  • 1 pinch ground clove

  • 100g Mainland butter

  • 100g plain flour

  • 160g Valumetric cheese

  • 375g grated Mainland Camembert

  • Panko or gluten free breadcrums

Method

  1. Make a roux by melting the butter and adding plain flour and stir until smooth

  2. Add milk and whisk until smooth and thickened

  3. Add spices and cheeses and whish until smooth

  4. Chill uncovered until set, roll/cut to shape and double crumb in panko breadcrumbs

Assembly

  • Mixed wild mushrooms

  • Potato hash cake

  • Mainland Camembert Croquette

  • Pumpkin pesto

  • 1 egg, crispy fried

  • Soft herb salad

  • Barker’s Professional Mustard & Herb Dressing

  • Pickled red onions
