Lime Friands
MAKES 29 FRIANDS AT 84 GRAMS EACH
Ingredients

1kg Bakel’s Friand Mix
380g water
440g melted butter
TOPPING
310g plain, soft icing
Method
Place the butter, water and friand mix into a mixing bowl fitted with a whisk. Whisk on low speed for 1 minute. Scrape down. Whisk on top speed for 5 minutes.
Deposit 60 grams into pre-greased friand tins.
Pipe 10 grams of Barker’s Professional Lime Fruit Curd just below the surface.
Bake in a conventional oven at 190°C or in a rotary oven at 185°C for 18 to 24 minutes. (Note: baking time and temperature may vary from oven to oven).
As they come out of the oven, de-tin and allow to cool completely.
Once cool, lightly dust with 2 grams of dusting sugar.
Using a medium round nozzle, pipe 12 grams of Barker’s Professional Lime Fruit Curd icing in a squiggle across the top of the friand.
