Kumara & Mushroom Stroganoff
Serves 4
Ingredients:
30ml olive oil
200g mixed mushrooms, sliced
1 red onion, sliced
2 cloves garlic, sliced
1 tbsp smoked paprika
100 ml water
100g Barker’s Professional Cream Style Meal Base
400g roasted kumara cut into 1.5cm cubes
1 tbsp balsamic vinegar
¼ cup flat leaf parsley, chopped
sea salt
freshly milled black pepper
Method:
In a cast iron pan, heat the olive oil and add the mushrooms, onion and garlic. Sauté for 3 minutes.
Add the water and Barker’s Professional Cream Style Meal Base. Bring to a quick simmer then add in the kumara, balsamic vinegar and parsley.
Season and serve
HANDY HINT:
Swap out the kumara for roast carrot and the mushrooms for roast capsicums.
