Kumara & Mushroom Stroganoff

Serves 4

Ingredients:

  • 30ml olive oil

  • 200g mixed mushrooms, sliced

  • 1 red onion, sliced

  • 2 cloves garlic, sliced

  • 1 tbsp smoked paprika

  • 100 ml water

  • 100g Barker’s Professional Cream Style Meal Base

  • 400g roasted kumara cut into 1.5cm cubes

  • 1 tbsp balsamic vinegar

  • ¼ cup flat leaf parsley, chopped

  • sea salt

  • freshly milled black pepper

Method:

  1. In a cast iron pan, heat the olive oil and add the mushrooms, onion and garlic. Sauté for 3 minutes.

  2. Add the water and Barker’s Professional Cream Style Meal Base. Bring to a quick simmer then add in the kumara, balsamic vinegar and parsley.

  3. Season and serve

HANDY HINT:

Swap out the kumara for roast carrot and the mushrooms for roast capsicums.
