Fruit Mince Slice

A delicious treat for the festive season.

Makes 16 pieces.

Ingredients:

Base

  • ½ cup white flour

  • ¼ cup caster sugar

  • ½ cup wholemeal flour

  • ½ cup rolled oats

  • 200g butter

Filling

  • 1½ cups Barker’s Professional Fruit Mince

Topping

  • ¼ cup flour

  • ½ tsp baking powder

  • 2 large eggs

  • ½ cup brown sugar

  • 2 cups desiccated coconut

Method:

  • Pre-heat the oven to 170°C.

  • Place all dry ingredients for the base into a food processor. Cut the butter into the mixture. Press the base into a well-greased square cake tin and bake for 12 minutes or until golden in colour.

  • Place the topping ingredients into a food processor and pulse until gently combined.

  • Spread the pre-cooked base with Barker’s Professional Fruit Mince, then the topping. Return to the oven for a further 15 to 20 minutes.

  • Leave to cool in the tin for a few minutes, then cut into 16 squares. Place on a wire rack to cool further.
