Fruit Mince Slice
Ingredients:
Base
½ cup white flour
¼ cup caster sugar
½ cup wholemeal flour
½ cup rolled oats
200g butter
Filling
1½ cups Barker’s Professional Fruit Mince
Topping
¼ cup flour
½ tsp baking powder
2 large eggs
½ cup brown sugar
2 cups desiccated coconut
Method:
Pre-heat the oven to 170°C.
Place all dry ingredients for the base into a food processor. Cut the butter into the mixture. Press the base into a well-greased square cake tin and bake for 12 minutes or until golden in colour.
Place the topping ingredients into a food processor and pulse until gently combined.
Spread the pre-cooked base with Barker’s Professional Fruit Mince, then the topping. Return to the oven for a further 15 to 20 minutes.
Leave to cool in the tin for a few minutes, then cut into 16 squares. Place on a wire rack to cool further.
