Beef Stroganoff

Serves 4

Ingredients:

  • 50ml olive oil

  • 20g butter, diced

  • 1 onion, diced

  • 3 cloves garlic, chopped

  • 250g button mushrooms, sliced

  • 600g beef fillet 1.5cm pieces

  • 1 tbsp sweet paprika

  • 50ml balsamic vinegar

  • 100ml water

  • 100g Barker’s Professional Cream Style Meal Base

  • 1 lemon, zested

  • 20ml lemon juice

  • 1 tbsp Worcestershire sauce

  • sea salt

  • freshly milled black pepper

Method:

  1. Heat the olive oil and butter in a cast iron pan. Add the onion and garlic and sauté for 3 minutes. Add the mushrooms and cook for a further 4 minutes. Remove this into a mixing bowl and set aside.

  2. Season the beef pieces with paprika and fry in the residual oil left in the pan.

  3. Deglaze the pan with the balsamic vinegar.

  4. Add the water and Barker’s Professional Cream Style Meal Sauce, bring to a quick simmer then add back in the mushroom mix, lemon zest and juice and Worcestershire sauce.

  5. Season and serve with chopped dill and parsley.

HANDY HINT:

Reconstituted dehydrated mushrooms can be used, deglaze the pan with the mushroom liquid instead of the balsamic vinegar.
