Avocado Sourdough Toast with Feta, Avocado & Beetroot
Take smashed avocado to the next level with this artisan breakfast recipe!
Ingredients:
200g creamy feta cheese
60ml cream cheese
1 lemon - juice and zest
sprigs fresh thyme
2 avocados
salt and pepper
2 thick slices sourdough, toasted
10g unsalted butter
Barker’s Professional Beetroot Relish
Radish - thinly sliced
Watercress
Edible flowers
Method:
Whipped feta - combine feta, cream cheese, lemon juice, zest and thyme in a food processor.
Smashed avocado - mash avocados, lemon, salt and pepper.
Assemble - toast bread. Spread with unsalted butter and whipped feta. Then top with Barker’s Professional Beetroot Relish and smashed avocado. Garnish with thinly sliced radish, watercress and edible flowers.
