Avocado, Feta & Poached Egg on Sourdough

Ingredients:

  • 1 tbsp pumpkin seeds

  • 1 tbsp sesame seeds

  • 1 large avocado

  • Goats cheese feta

  • Barker’s Professional Yuzu & Citrus Dressing

  • Pinch of salt

  • Handful of sliced spring onion

  • 1 poached egg

  • 1 slice sourdough toast

  • Parsley for garnish

  • Lemon wedge

Method:

  1. Lightly toast pumpkin and sesame seeds in a pan.

  2. Slice whole avocado into cubes and place in a bowl.

  3. Add in toasted seeds, Barker’s Professional Yuzu & Citrus Dressing, salt and spring onion. Mix well without breaking up the avocados too much.

  4. Place avocado mixture on toast with pieces of feta spread throughout.

  5. Top with poached egg and garnish with parsley and lemon wedge.
