Apricot Garden Vegetable Glaze

Ingredients:

  • 1/3 cup Anathoth Farm Apricot Jam

  • 25g butter, melted

  • 1/2 tsp grated orange peel

  • 1/2 tsp lemon juice

  • 1/4 tsp salt

  • 1/4 tsp ground nutmeg

Method:

  1. Mix all the glaze ingredients together in a bowl. There should be approximately 1/2 cup of glaze.

  2. Use tasty seasonal vegetables such as carrots and zucchini, trimming the ends and cutting finely into ribbons (a vegetable peeler works well for this).

  3. Steam over a pot of shallow water brought to the boil, for around 2-3 minutes.

  4. Transfer to a serving dish, drizzle over glaze (tossing gently to coat all the vegetables).
